I am not kidding when I say this is the best peaches & cream chia seed pudding you will ever have.

Especially since peaches are in season right now. It is creamy, it is delicious and incredibly satisfying.

This recipe is also plant-based and is super versatile. You can substitute any of the ingredients to your liking or what you have on hand.

Let’s talk about why this peaches & cream chia seed pudding recipe is healthy.

It is high in fiber: 16.25g

Fiber plays a critical role in maintaining various aspects of health that are directly linked to longevity. Additionally, it has so many vitamins, minerals and healthy fats thanks to the hemp hearts, chia seeds, vanilla, raw honey, collagen peptides and yogurt.

In other words, all of the ingredients in this recipe are directly linked to longevity.

While this serves well as breakfast or snack, it is incredibly satisfying as a dessert as well!

The BEST Peaches & Cream Chia Seed Pudding Recipe

Ingredients:

2 ripe juicy peaches, sliced and pitted (separate 1 for blending and 1 for topping)

1 scoop Vital Protein Collagen Peptides

2 1/2 tbsps. chia seeds

3/4 cup homemade hemp milk

1/2 cup coconut yogurt split in half (1/4 & 1/4). I like – obsessed – with Culina coconut yogurt which has a Greek yogurt style to it

1 tbsp. raw honey

1 tsp vanilla extract

1/2 tsp cinnamon

Instructions

  1. In a blender combine 1 peach, hemp milk, protein powder, 1/4 cup yogurt, honey, vanilla and cinnamon
  2. Blend until smooth
  3. In a separate container, add chia seeds.
  4. Pour the peach mixture on top of chia seeds
  5. Stir well to combine ingredients and to avoid chia seed clumping
  6. Cover and refrigerate overnight
  7. Top with 1/2 cup yogurt and 1 sliced peach
